Colmore Business District’s annual two day Food Festival is held in Victoria Square, Birmingham attracts tens of thousands of visitors and is an integral part of the city’s cultural and culinary calendars.

The Food Festival is free to attend and allows the hospitality venues of the District to showcase their dishes and talents, giving visitors a flavour of what they offer all year round. All dishes are capped at £4, allowing festival goers to try plenty of fantastic options.

My Cooking Demo. Ma Por Tofu

Recipe for Ma Por Tofu, as cooked by James B Wong on Colmore Food Festival 30th June 2017


50g minced beef
Garlic Puree ½ Teaspoon
1 Cube Tofu, diced
1 piece baby corn, chopped finely
2 piece of straw mushroom, chopped finely
½ red chilli, chopped
1/5 Red/Red Pepper, diced finely
1 table spoon of preserved vegetable, chopped
1 tablespoon Chilli Bean Sauce
½ tablespoon oyster sauce
½ teaspoon chicken stock, mix with hot water
½ teaspoon sugar
½ teaspoon salt
¼ teaspoon chilli oil (optional)
½ teaspoon corn Flour, mix with 50ml of water
½ teaspoon sesame oil
Chopped coriander/spring onion to garnish

1. Heat water in a saucepan to boil, add tofu
2. Heat wok, add oil, gently fry garlic puree
3. Add mince, stir fry
4. Add baby corn, mushroom, chilli, pepper, preserved veg
5. Add chicken stock, sugar, salt, chilli paste, oyster sauce, chilli oil
6. Simmer for 1 minute​ in low heat
7. Add corn starch to 50ml of cold water, add to sauce to thicken to thicken
8. Drain Tofu, gently add to wok
9. Add sesame oil
10. Gently mix, be careful not to break the tofu
11. Serve onto plate, add garnish
